I decided to grow a bunch of kershaw pie and had no idea what to do with them. A friend of my grandparents told me about this recipe and I had to try it.

  • 2 1/2 c
    cooked, mashed kershaw squash
  • 1/4 c
  • 2
    eggs, beaten
  • 1 c
  • 1 Tbsp
  • 1/4 tsp
  • 1/4 tsp
  • 1/4 tsp
  • 1/2 tsp
    lemon extract
  • 2 Tbsp
  • 1
    unbaked pie shell

How to Make Kershaw Squash Pie


  1. Heat oven to 450*.
  2. Stir together kershaw and cream; add beaten eggs and mix well. Add sugar, flour, salt, nutmeg, and allspice. Mix well.
  3. Blend in lemon extract and butter.
  4. Pour mixture into pie shell; bake 10 minutes. Reduce oven temperature to 350* and bake an additional 40 minutes
