Credit for this recipe goes to my sister-in-law, Judy. She brought this recipe home from Hawaii. It fast became a family favorite! Unfortunately, in my house, it disappears too fast for me to get a photo :)

Ingredients
- 3 large egg whites
- 1/2 teaspoon baking powder
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 3/4 cup coconut, shredded (divided)
- 3/4 cup macadamia nuts, chopped (divided)
- 1 small cool whip
How To Make judy's macadamia nut pie

Step 1Preheat oven to 350 and lightly grease a 9" pie pan

Step 2Beat egg whites and baking powder until stiff peaks form

Step 3Add sugar and vanilla gradually, beating until of meringue consistency

Step 4Fold in graham crumbs, 1/2 cup coconut and 1/2 cup nuts

Step 5spread batter into pie pan and bake for 30 minutes

Step 6Allow to cool completely

Step 7Spread Cool Whip over top and sprinkle with remaining coconut and nuts.
