Credit for this recipe goes to my sister-in-law, Judy. She brought this recipe home from Hawaii. It fast became a family favorite! Unfortunately, in my house, it disappears too fast for me to get a photo :)

Ingredients

  • 3 large
    egg whites
  • 1/2 tsp
    baking powder
  • 1 c
    sugar
  • 1 tsp
    vanilla extract
  • 1 c
    graham cracker crumbs
  • 3/4 c
    coconut, shredded (divided)
  • 3/4 c
    macadamia nuts, chopped (divided)
  • 1 small
    cool whip

How to Make Judy's Macadamia Nut Pie

Step-by-Step

  1. Preheat oven to 350 and lightly grease a 9" pie pan
  2. Beat egg whites and baking powder until stiff peaks form
  3. Add sugar and vanilla gradually, beating until of meringue consistency
  4. Fold in graham crumbs, 1/2 cup coconut and 1/2 cup nuts
  5. spread batter into pie pan and bake for 30 minutes
  6. Allow to cool completely
  7. Spread Cool Whip over top and sprinkle with remaining coconut and nuts.
