joe's best sweet potato pie

I can't take the credit on this one...hubbie discovered the perfect spice blend & we love it! Best served with vanilla icecream or cool whip. It is great warm or cold! Keeper for sure!!

Ingredients

  • 1 pound sweet potatoes, cooked
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 2 - eggs
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 - 9" unbaked pie crust

How To Make joe's best sweet potato pie

  • Step 1
    Peel & then break up sweet potatoes in large mixing bowl. Add the soft butter & mix well with mixer until blended. Stir in all other ingredients & then beat with mixer until smooth. Pour into unbaked pie shell & spread to edges. Bake @ 350 for 55-60 minutes, until a knife inserted into center of pie comes out clean. If the pie crust edges begin to get too brown you may want to cover with tin foil on the edges only. Mine came out great but all ovens cook differently so you may want to keep an eye on yours. The pie will puff up and then sink once it begins to cool, so don't freak out...it's all good!! Enjoy! Simple & great!!
