This is a great pie, Mix everything in one bowl. It makes its own crust. We really enjoy coconut in this house. It is like eating custard pie.

  • 4 large
    eggs, beaten
  • 1/2 stick
    butter, melted
  • 1 3/4 c
  • 1/2 c
  • 1/4 tsp
  • 1 tsp
    vanilla (cap full)
  • 1/2 Tbsp
    baking powder
  • 2 c
  • 1 1/2 c

How to Make Jodie's Impossible Pie


  1. Preheat oven to 350* Bake for 50 minutes
  2. Add melted butter, beaten eggs, sugar, flour, salt, baking powder, milk. Beat until well blended.
  3. Stir in coconut and vanilla, pour into ungreased pie pan, use deep dish for one pie or you may pour into 2 regular pie pans. You may use a brownie pan also. Bake 50 minutes or when toothpick inserted comes out clean. Remove and let cool, pie will,set, like a custard with crust. Yummmmmy
