This adaptation comes from a recipe in a little booklet entitled "Peyton Presents Some Sweet Ideas." Peyton Zieger was a very creative cook and delighted in coming up with new recipes using sweet potatoes. She also wrote a food column in one of our local papers. Everyone loves this yummy sweet potato pie! Since Peyton encouraged us to experiment with recipes I tweaked this one just a wee bit! I believe you will find it a delightful and much requested pie...so just enjoy! p.s. Baking the sweet potatoes ahead makes this really quick to make!

Ingredients

  • 1 1/2 cups sweet potatoes - cold, cooked, mashed
  • 1/2 cup sour cream
  • 1 - 13 ounce can evaporated milk
  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 2 - eggs, beaten
  • 1/2 cup biscuit mix
  • 1 teaspoon apple or pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1 tablespoon lemon juice
  • 1 teaspoon whiskey
  • TOPPING:
  • 1/4 cup brown sugar
  • 1/2 cup pecans, chopped
  • 2 tablespoons butter, melted
  • 1 tablespoon flour
  • 1/8 teaspoon cinnamon
  • 1/4 cup flaked coconut

How To Make it's possible sweet potato pie

  • Step 1
    In a large bowl, combine all the pie ingredients above by mixing at medium or high speed for 2 minutes. In a small bowl, mix all the topping ingredients together and set aside until ready to use.
  • Step 2
    Pour into two well greased 8 or 9-inch pie pans. This makes its own pie crust---amazing!
  • Step 3
    Bake in preheated 350 degree oven (325 degree if using glass pie plates) for about a total of 45 minutes or until knife inserted in center comes out clean.
  • Step 4
    After 35 minutes, spoon the topping around the outside edge - about an inch or so in from crust edge. Return to over to finish baking.
  • Step 5
    Cool on wire rack. Serve with whipped cream to which a pinch or two of nutmeg has been folded in for another layer of taste surprise.
