Florida is known for key lime pie and what could be better than key lime cheesecake and cooked in an intstant pot.

Ingredients

  • CRUST - 6X3" SPRING FORM PAN
  • 1 package graham crackers (8)
  • 4 tablespoons butter, melted
  • 1 pinch salt
  • 2 teaspoons brown sugar
  • FILLING
  • 16 ounces cream cheese, softened
  • 14 ounces sweetened condenced milk
  • 1/4 cup sugar
  • 1/2 lime zest
  • 1 pinch salt
  • 1 tablespoon cornstarch
  • 2 large eggs
  • 1/2 cup key lime juice
  • 2 tablespoons all purpose flour
  • WHIP CREAM TOPPING
  • 2 cups heavy whipping cream
  • 6 tablespoons sugar

How To Make instant pot key lime cheesecake

  • Step 1
    Crush graham crackers and add butter, salt, and brown sugar. Line bottom of spring pan with parchment paper and spray bottom and sides with pam. Dump crust mixture into bottom of pan and press down to form a crust. Place crust in freezer while preparing the filling.
  • Step 2
    Mix filling ingredients in a bowl and stir until combined. Take out crust and add filling mixture. Place on instant pot trivit and do not cover. Add 1 cup water to the instant pot and lower trivit into the instant pot.
  • Step 3
    Turn instant pot to sealing and cook on high pressure, turn off keep warm setting and cook for 40 minutes, natural release for 30 minutes and then a quick release. Take key lime cheesecake out and gently dab with paper towel to get rid of excess moisture on top.
  • Step 4
    Place cheesecake in refrigerator for 4 hrs good, 8 hrs better, overnight is the best.
  • Step 5
    Beat the heavy whipping cream and sugar together to make a whipped topping and serve on top of the key lime cheesecake.
