individual chicken pot pies
I made this on a winter day trying to make a lower fat version of the classic pot pie. Tastes just a good with less guilt.

Ingredients
- 1 package frozen mixed vegetables
- 3 tablespoons butter, cold
- 1/4 cup flour
- 1 small onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups chicken broth
- 2/3 cup skim milk
- 2 cups chicken
- 1 can flaky layers biscuits
How To Make individual chicken pot pies

Step 1Melt butter in skillet. Stir in flour. Add onion, salt and pepper. Cook until onion softened. Stir in broth and milk. Boil a 2 minutes while stirring. Remove from heat.

Step 2Preheat oven to 425F. Spray 3-4 oven proof dishes with nonstick spray. Stretch 1 biscuit in the bottom of each dish. Equally distribute the filling between the dishes. Top with remaining cut up biscuits.

Step 3Place dishes on cookie tray to catch possible bubbling over. Bake 10-15min or until golden brown on top.
