roberta's impossible pie
This recipe was actually given to me by my sister many many years ago. The only name she gave it was 'impossible pie' I like to think of it as 'Roberta's Impossible Pie' I believe she would have liked that! I hope others will enjoy this as much as my family does!

Ingredients
- 4 large eggs
- 1/4 cup margarine
- 1/2 cup all purpose flour
- 2 cups rich milk (whole milk or table cream)
- 1 cup coconut, flaked
- 1 cup white sugar
- 2 teaspoons pure vanilla extract
How To Make roberta's impossible pie

Step 1Blend all ingredients in blender for a few minutes until well blended together. Pour into a deep 10 inch greased pie plate.

Step 2Bake at 350 degrees for about 1 hour or until centre tests firm.

Step 3Please Note, the flour will settle to form the crust, the coconut forms the topping, and the centre is an egg custard filling.
