Impossible taco pie

Don't let the name fool you, it's not impossible!! A recipe that I got from one of my Aunt's. Very easy and delicious.

  • 1 lb
    lean ground beef or turkey
  • 1/2 c
    finely chopped onion
  • 1 pkg
    taco seasoning
  • 1 can(s)
    chopped green chilies, drained
  • 2 c
  • 1-1/3 c
  • 4 medium
  • 2
    tomatoes - diced
  • 1 c
    shredded cheese of your choice (approx 4 oz)
  • 1 can(s)
    sliced black olives
  • 1/2 c
    sour cream
  • 1 c
    shredded lettuce
  • 1 can(s)
    small can of corn, drained

How to Make Impossible taco pie


  1. Brown ground beef; drain and add chopped onion and taco seasoning (with water as package directs) but remember you want this pretty dry not real wet.
  2. Take above meat mixture and spread on the bottom of a deep dish pie pan, sprinkle green chilies & small can of drained corn.
  3. Beat Bisquick, milk, eggs until smooth. Pour over the meat mixture and bake at 400 degrees for 35 mins
  4. Once this is done remove from oven and sprinkle cheese on the top and place back in oven until cheese melts and is golden brown. Once cheese melts insert a knife to make sure it comes out clean so you know your bisquick topping is done.
  5. Cool for 5 min and service with diced tomatoes; sour cream and lettuce. You can always put some corn chips on the side.
