This is a wonderful easy New Zealand dessert. Serve hot or cold. May be served with fruit, jello, whipped cream or ice cream.

Ingredients

  • 4 large eggs
  • 1/2 cup flour
  • 1 cup refined sugar
  • 2 teaspoons vanilla extract
  • 4 ounces soft butter
  • 1 cup coconut ( shredded or grated and dry)
  • 2 cups milk
  • 1/4 teaspoon ground nutmeg (optional)

How To Make impossible pie

  • Step 1
    Grease 9 inch pie dish
  • Step 2
    Into a bowl mix together for four minutes, the eggs, flour, sugar, vanilla and butter.
  • Step 3
    Add milk and coconut, mix until all is combined.
  • Step 4
    Pour the mixture into the pie dish and sprinkle with nutmeg if desired before baking
  • Step 5
    This pie forms it's own pastry, filling and crust as it bakes.
  • Step 6
    Bake on 2nd top shelf of oven preheated to moderate (325 degrees F)
  • Step 7
    Make sure the center of the pie is set before removing from oven, if not, allow a little longer.
