This is a wonderful easy New Zealand dessert. Serve hot or cold. May be served with fruit, jello, whipped cream or ice cream.

Ingredients
- 4 large eggs
- 1/2 cup flour
- 1 cup refined sugar
- 2 teaspoons vanilla extract
- 4 ounces soft butter
- 1 cup coconut ( shredded or grated and dry)
- 2 cups milk
- 1/4 teaspoon ground nutmeg (optional)
How To Make impossible pie

Step 1Grease 9 inch pie dish

Step 2Into a bowl mix together for four minutes, the eggs, flour, sugar, vanilla and butter.

Step 3Add milk and coconut, mix until all is combined.

Step 4Pour the mixture into the pie dish and sprinkle with nutmeg if desired before baking

Step 5This pie forms it's own pastry, filling and crust as it bakes.

Step 6Bake on 2nd top shelf of oven preheated to moderate (325 degrees F)

Step 7Make sure the center of the pie is set before removing from oven, if not, allow a little longer.
