holiday pineapple pie
I have baked this pineaple pie many times. It ia always a winner at my home. This makes a beautiful holiday presentation, when you have guests. Just rim a larger plate with the cranberries...It looks so beautiful, with any pie. It sets the mood for the holidays. Nancy..Dec. 2012

Ingredients
- 1 can (20 z.) crushed pineapple
- 1 cup sugar
- 1/4 cup flour
- 1 tablespoon lemon juice
- 1 tablespoon butter..melted
- 1/4 teaspoon salt
- - pastry for a double-crust ... 9 inch pie
- 3/4 cup flaked coconut
- 1/2 cup powdered sugar
- 1/4 teaspoon vanilla extract
How To Make holiday pineapple pie

Step 1Drain pineapple. In another bowl conbine pineapple, sugar,flour,lemon juice,butter and salt, mix well and set aside. Line a 9 inch pie plate with the bottom pastry. Sprinkle with coconut. Spread pineapple mixture over the coconut. Top with remaing pastry, flute edges and cut slits in the top pastry. Bake in a pre-heated , 400 F. oven 35-40 minutes or until golden brown. Cool on a wire rack. NOTE: For the HOLIDAYS put pie on a larger plate, and circle the pie with red berries and a few holly leaves.
