Heidi's Irish Coffee Cream Pie
graham cracker crumbs
butter (1/2 stick), melted
shaved chocolate, garnish, optional
Preheat oven to 375F.
2Combine crumbs and butter in small bowl.
3Press into 9-inch pie plate.
4Bake until set, about 8 minutes.
Dissolve coffee in water.
7Combine all ingredients except garnish and beat on medium speed until mixture holds peaks.
8Pour all but 1/2 cup into crust, spreading evenly.
9Spoon remaining filling into pastry bag fitted with rosette tip and pipe frill around rim.
10Garnish with shaved chocolate.
11Chill thoroughly, 4 hours or overnight.
