I was given this recipe years ago by a chef at a restaurant in upstate New York. It's fantastic, cool, and refreshing. This recipe will make 2 pies, but I use a big pie plate and pile it high, very pretty.

Blue Ribbon Recipe

Sweeten up your next luncheon or game night with this light and fruity dream of a pie. Light, airy, and refreshing, it is heavenly. We loved the burst of pineapple in the creamy filling. It's sweet with a slight tartness. An easy no-bake dessert. This makes two pies, so a great option if you're serving a crowd.
