Ingredients

CRUST

2 tsp
melted margarine
2 Tbsp
water
1 c
graham cracker crumbs

FILLING

1 Tbsp
gelatin, unflavored
2 Tbsp
cool water
1/4 c
boiling water
1/2 c
cottage cheese, lowfat
1/4 c
skim milk
1 tsp
vanilla extract
1 tsp
coconut extract
1 1/2 Tbsp
sugar
2 c
crushed pineapple, drained

GARNISH

ground cinnamon

How to Make Hawaiian Pineapple Pie

Step-by-Step

  • 1Preheat oven to 250 degrees
  • 2Combine ingredients for crust in ungreased 9-inch pie pan. Pat out evenly to form crust.
  • 3Bake in preheated oven for 15 minutes. Cool.
  • 4In small bowl, soften gelatin in cool water. Add boiling water and stir until gelatin is completely dissolved.
  • 5Transfer gelatin mixture to blender. Add all other filling ingredients and process until smooth.
  • 6Pour filling into crust. Sprinkle top with cinnamon. Refrigerate until firm, about 2 hours.
