hand-held apple pies
I remember when McDonalds first came out with their apple pies and I loved them as a child. This recipe is kind of reminiscent of those pies! Other fruits would work for filling, too.

Ingredients
- 2 tablespoons butter
- 5 cups diced, peeled, granny smith apples (about 4)
- 4 tablespoons sugar, divided
- 1 1/2 teaspoons cinnamon, divided
- 1/8 teaspoon nutmeg
- 1 pinch salt
- 1 tablespoon flour
- 2 teaspoons lemon juice
- 8 egg roll wrappers
- 4 teaspoons coconut oil or more if necessary
How To Make hand-held apple pies

Step 1Heat butter in a skillet and let it get slightly brown. Add apples, 3 tablespoons sugar, 3/4 teaspoon cinnamon, nutmeg and salt. Stir occasionally for about 5 minutes until apples have softened. Add flour and cook for an extra minute. Add lemon juice and remove from heat.

Step 2Place an egg roll wrapper on clean flat surface with point towards you. Brush edges with water. Put about 1/3 cup apple mixture on center of wrapper. Fold both sides of wrapper over filling. Fold in bottom corner and roll up as tightly as you can. Repeat with rest of wrappers.

Step 3Combine rest of sugar and cinnamon in shallow bowl. Heat oil in skillet until hot. Place the rolls into hot oil and cook - turn often until golden brown. Remove, dredge in cinnamon-sugar and place on cooling rack. Depending on size of skillet, you may need to cook them in batches.

Step 4May be prepared up to the frying stage, wrapped and frozen.
