My grandmother-in-law gave this recipe to me back in 1978. Years that pecans are just too expensive (like THIS year - 2011) I like to make this pie. It tastes like the real deal and is perfect for those with nut allergies or to serve on April Fool's Day!

Ingredients

  • 2
    eggs
  • 3/4 c
    sugar
  • 2/3 c
    butter, melted
  • 3/4 c
    maple syrup
  • 2 tsp
    vanilla extract
  • 3/4 c
    quick cooking oats
  • 2/3 c
    coconut, flaked
  • 1/2 tsp
    salt
  • 1
    unbaked pie shell

How to Make Granny's Mock Pecan Pie

Step-by-Step

  1. In a bowl combine all of the ingredients together and pour into the pie shell.
  2. Set the pie on a baking sheet (this helps conduct heat to the bottom of the pie and crisp it up. A trick I learned from Granny).
  3. Bake for 15 minutes in a preheated 400*F oven then reduce heat to 350*F and bake 30 minutes longer.
  4. Loosely cover top with foil if it is getting too dark but should be okay. Everyone's oven is a little different. Enjoy!!
