granny's mock pecan pie

My grandmother-in-law gave this recipe to me back in 1978. Years that pecans are just too expensive (like THIS year - 2011) I like to make this pie. It tastes like the real deal and is perfect for those with nut allergies or to serve on April Fool's Day!

Ingredients
- 2 - eggs
- 3/4 cup sugar
- 2/3 cup butter, melted
- 3/4 cup maple syrup
- 2 teaspoons vanilla extract
- 3/4 cup quick cooking oats
- 2/3 cup coconut, flaked
- 1/2 teaspoon salt
- 1 - unbaked pie shell
How To Make granny's mock pecan pie

Step 1In a bowl combine all of the ingredients together and pour into the pie shell.

Step 2Set the pie on a baking sheet (this helps conduct heat to the bottom of the pie and crisp it up. A trick I learned from Granny).

Step 3Bake for 15 minutes in a preheated 400*F oven then reduce heat to 350*F and bake 30 minutes longer.

Step 4Loosely cover top with foil if it is getting too dark but should be okay. Everyone's oven is a little different. Enjoy!!
