This recipe belonged to 94 year old Iaeline Jackson. She was the grandmother of a co-worker of mine. My husband's mother's maiden name was Jackson so I'm adopting Mrs. Iaeline into our family as Grandma. She has been making this pie for her family many many years.
Put all ingredients (for pie filling) in saucepan and cook until thickened and bubbly. NOTE: I mix beaten egg yolks and milk together in saucepan then add dry ingredients and butter; whisk until bubbly and thickened.
Pour into cooled pre-baked pie shell.
Make meringue by beating egg whites until stiff. Add sugar one tablespoon at a time. Add cream of tartar or baking powder (and vanilla if desired.) Beat until stiff.
Put meringue on top of pie and bake at 400 degrees 5-8 minutes or until lightly brown. Cool on wire rack.
