    1 baked 9" pie shell
  • ·
    1 1/4 cup sugar
  • ·
    1/4 cup plus 2 heaping t. flour
  • ·
    1/8 t. salt
  • ·
    1 cup water
  • ·
    4 egg yolks, beaten
  • ·
    1 t. fresh grated lemon peel
  • ·
    1/2 cup fresh lemon juice
  • ·
    1 1/2 cups hot milk
  • ·
    2 t. margarine
  • ·
    8 t. sugar
  • ·
    dash salt

How to Make Gold Rush Lemon Pie


  1. Mix sugar, flour and salt in pan. Add water and stir until smooth. Blend in egg yolks (4) and lemon peel, and lemon juice. Add hot milk and gradually add 2 T. margarine. Place over medium heat and bring to boil. Stir constantly. Boil a full 5 minutes. Cool and pour into pastry shell. Top with meringue made by beating egg whites until frothy, then adding sugar and salt gradually (8 T. sugar and dash salt), till peaks form. Place in 350 oven until brown, about 5 minutes
