Gluten Free Pie Pastry

The recipe uses my Gluten Free Flour Blend, the one I have posted here. I have not tried it yet with other blends.

350 kg
my gluten free flour blend
1 Tbsp
white sugar
1/4 tsp
1/2 c
unsalted butter
1/2 c
crisco shortening
1 Tbsp
white vinegar or cider vinegar
5 - 7 Tbsp
cold water


1Stir your flour blend well, then weigh out amount needed.
2Mix flour, sugar, and salt into a bowl.
3Add in the butter and shortening together, making it look like slivers of or sand and stones, not to fine.
4Add in the vnegar, and rub into crumbs well.
5Add water a little at a time, making a light dough just holding together.
6Wrap two discs into saran wrap and chill about 15 minutes. Not too long as it will go rock hard.
7Roll out as you would any other pastry on a gluten free floured board.
8Proceed as for your regular pies, for baking times etc.

Iuse these for butter tarts, cranberry tarts, and mincemeat tarts.
