gelatin cheesecake
Joe and I were watching tv one evening and he was channel surfing when he stopped on Paula Deen. She was making this. Joe just sat and watched then said "I want that". So I made it and it is awesome. This pie is a low sugar pie. But you can't tell that by the taste. Easy and yummy. ( This is from Paula Deen) **** photo is my own****

Ingredients
- 12 ounces cottage cheese, lowfat
- 3 packages sugar free strawberry jello ( 0.3 oz size)
- 2 - graham cracker pie crust ( deep or 9 inch)
- 1 pint fresh strawberries (sliced)
- 8 ounces whipped topping, thawed
How To Make gelatin cheesecake

Step 1Place cottage cheese in a blender, mix 2 boxes of jello with 1 cup hot water ( stir to dissolve) then add 1 cup ice cold water. Add to blender and blend until smooth. Divide into the pies ( about 1 3/4 cup each)Place in fridge and let set. about an hour or so.

Step 2Slice strawberries and place on top of pies. Mix the other box of jello according to package directions. Pour over top of strawberries and return back to fridge until set ( about a hour or so)

Step 3Top each pie with half the whipped topping. Place in center and spread out toward the eadges leaving about 1 inch from edge. Garnish with additional strawberries if you like
