frozen strawberry pie with lemon poppy seed crust

This Retro pie was first spotted by me in the early 70's when Jello salads were big. It was on a book called the Joys of Jello. I fell in love imediately. It is one of my favorites. I added the Lemon Poppy seed crust a few years ago when I didn't have the prebought crust. This is an easy pie that is wonderful on a hot day

Ingredients

  • LEMON POPPYSEED CRUST (OR BUY A PREMADE CRUST)
  • 1/2 stick butter
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup dark brown sugar, firmly packed
  • 1 teaspoon poppy seeds
  • 3/4-1 cup flour
  • 1 medium egg
  • 3/4 teaspoon lemon extract
  • FILLING
  • 10 ounces frozen stawberries with liquid
  • 1 (3 oz package starwberry jello
  • 1 pint vanilla or strawberry ice cream

How To Make frozen strawberry pie with lemon poppy seed crust

  • Step 1
    Starting with the crust: Mix the egg, butter, baking powder, lemon extract, salt and sugar together. Themn mix in the flour and turn into a pie plate and push up the sides to make a crust. Bake at 350 for 12 minutes, and take out. Repush up the side with the back of a spoon and let cool.
  • Step 2
    After the pie crust is cool and the strawberries are defrosted, you can continue. In a measuring cup pour off the liquid from the strawberries and add enough water to make 1 cup total. Put the water/strawberry mix in a sauce pan and bring to a boil. Add the jello and stir until all sugar has disolved. Take from burner and add to the strawberries. spoon in the ice cream and stir until it all melts. then pour into the pie crust and put in freezer. 4 or more hours until frozen. Slice and serve. makes 8 servings.
