fresh strawberry pie

When I say "fresh", I mean fresh. These strawberries were still on the bush this morning. Thanks to some help from my 3 year old, I have 2 ice cream pails full of strawberries to use. Here is just one way they're being put to use.

Ingredients

  • 1 - frozen deep dish pie crust
  • 1 cup sugar
  • 1 cup water
  • 2 tablespoons corn starch
  • 2 tablespoons light corn syrup
  • 1 box (3 oz) strawberry jello
  • 3 - 3 1/2 cups strawberries, fresh

How To Make fresh strawberry pie

  • Step 1
    Bake and cool pie crust according to package directions.
  • Step 2
    Remove stems from strawberries and wash. If they're small, leave whole, or you can cut them in half, or slice them; whatever is your preference.
  • Step 3
    Mix together sugar, water, corn starch, and light corn syrup in a medium saucepan. Bring to a boil over medium heat.
  • Step 4
    Continue boiling, whisking mixture, until it turns somewhat clear.
  • Step 5
    Remove from heat and whisk in jello, 2 minutes. Allow mixture to cool.
  • Step 6
    Once cool, gently mix in strawberries.
  • Step 7
    Pour into pie crust and refrigerate overnight, or until set. Top each piece with Cool Whip when serving, if desired.

    **You can also use this recipe with fresh raspberries and raspberry jello**
