How to Make fresh pumpkin pie
- strain pumpkin and mix with milk , sugar, beaten eggs, salt and spices and beat two minutes.
- if pumpkin is very stringy i put the pumpkin mixture in a bender and mix it for about 30 or 40 seconds.
- pour into pie plate which has been lined with pastry.( pie crust).place in hot oven at 475F for fifteen minutes, then reduce the heat and bake 45 minutes in moderate oven at 400F.
- long, slow cooking brings out the flavor of the pumpkin. makes one nine inch pie.
