french vanilla sweet potato pie
I created a fifth sweet potato pie recipe with a twist of French vanilla. It's in the style of a double layer pumpkin pie, with a new French vanilla filling on the bottom of the crust.

Ingredients
- 1 cup heavy cream
- 1 packet instant French vanilla pudding mix
- 8 ounces cream cheese, softened
- 4 tablespoons French vanilla liquid creamer
- 1 unbaked pie crust (9 inch)
- 1 cup vanilla chips
- 3 sweet potatoes
- 2 tablespoons margarine
- 1 cup cane sugar
- 3/4 cup fat free milk
- 2 teaspoons pure vanilla extract
How To Make french vanilla sweet potato pie

Step 1In a medium bowl, combine the heavy cream, pudding mix, cream cheese and liquid creamer; whisk together until blended.

Step 2Spread into bottom of the pie crust. Sprinkle with vanilla chips. Refrigerate for 4 hours.

Step 3Preheat oven to 375 degrees F.

Step 4Bring a large saucepan of water to boil, add the sweet potatoes and boil for 30 minutes. Drain well and peel them.

Step 5Place in a large bowl and mash with a potato masher until the lumps are gone.

Step 6Add the margarine, sugar, milk and vanilla extract to the mashed sweet potatoes. Beat with a fork until combined.

Step 7Spoon into a prepared pie crust.

Step 8Bake for 25 minutes or until the pie is set. Cool completely.
