Even someone who isn't a fan of pumpkin pie may like this pumpkin cheesecake pie. There is just a touch of pumpkin pie spice, and nothing extra. The pumpkin is not overwhelming. It's rich and creamy with a buttery graham cracker crust. Plus, it's very easy to make. A simple holiday dessert.

Ingredients

  • 12 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 cup 100% pure pumpkin
  • 2 large eggs
  • 1 - graham cracker crust

How To Make fluffy pumpkin cheesecake pie

  • Mix cream cheese, sugar, and pumpkin pie spice.
    Step 1
    Preheat oven to 350 degrees F. Mix cream cheese, sugar, and pumpkin pie spice on medium speed.
  • Stir in pumpkin.
    Step 2
    Stir in pumpkin.
  • Add eggs and mix.
    Step 3
    Add eggs and mix until blended.
  • Pour into a graham cracker crust.
    Step 4
    Pour into crust.
  • Bake for 40 minutes.
    Step 5
    Bake at 350 degrees F for 40 minutes.
  • Cool the baked pie.
    Step 6
    Cool. Refrigerate for 3 hours or overnight.
