florida orange meringue pie
Oh boy! I forgot about this pie recipe! My girlfriend who lives in Florida sent this to me many years back. I made it but then my recipe went traveling as all recipes seem to do. I found it and now am posting so I don't have to worry anymore. Yay! On my card from Gwen, it says: Seeing is believing--to taste it. that's even better! Oh yes..someone was right! delish!!

Ingredients
- 1 cup orange juice, fresh
- 1 cup orange sections, cut in pieces
- 2 tablespoons grated, orange rind
- 1 cup sugar
- 5 tablespoons cornstarch
- 3 - egg yolks, beaten
- 2 tablespoons lemon juice
- 2 tablespoons tablespoons butter or margarine
How To Make florida orange meringue pie

Step 1Combine orange juice, sections, grated rind, sugar and cornstarch. Cook on low heat until clear. Add a little hot mixture to beaten egg yolks. Return to mixture and cook about 5 minutes longer. Remove from heat. Blend in lemon juice, butter or margarine. Pour into baked pie shell. Be sure filling and shell are both hot or both cold. Cover filling with meringue.

Step 2Bake in 350F degree oven until lightly browned.
