Ingredients

  • CRUST
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 3/4 cups flour
  • 4-5 tablespoons cold water
  • FILLING
  • 12 ounces evaporated milk
  • 4 - eggs
  • 1 teaspoon vanilla
  • 1 cup sugar

How To Make filipino egg pie

  • Step 1
    Cut butter into flour until pea-sized. Add salt. Add cold water until a little sticky. Chill dough 15 minutes. Roll out to correct circle size and place in pie pan. Make a pretty edge.
  • Step 2
    Preheat oven to 400 degrees. Poke holes in bottom. Line with waxed paper and pour in rice to weight down. Cook 12-15 minutes.
  • Step 3
    Heat milk in microwave about 2 minutes. Don't boil. Separate 2 eggs, reserving whites. Add 2 whole eggs and 2 yolks to a bowl. Add sugar while stirring. Stir in scalded milk.
  • Step 4
    Beat egg whites with electric mixer until stiff. Fold egg whites into egg/milk/sugar mixture. Pour into pie crust.
  • Step 5
    Bake at 350 degrees about 15 minutes. Lower heat to 325 and bake 30-35 minutes until golden brown. Cool before serving.
