I personally like to bake my sweet potatoes ahead of time rather than use canned ones. Wanting more zing than a regular sweet potato pie I added the ginger. Sometimes I will add 1/4 tsp. of cardamom too! The three extracts are a huge hit with family and friends too. The scents while baking are heavenly! too

Ingredients
- 2 - 9-inch pie crusts
- 3 cups mashed cooked sweet potatoes
- 1 stick butter, melted
- 4 - eggs, beaten
- 1 cup brown sugar
- 1 cup white sugar
- 1 can 16 oz. evaporated milk
- 1/2 teaspoon salt
- 1 teaspoon ginger
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon lemon extract
- 1 teaspoon orange extract
- 1 teaspoon pure vanilla extract
How To Make fall yam pie

Step 1In a large bowl, blend all ingredients with an electric mixer.

Step 2Pour into pie shells.

Step 3Bake in preheated 350 degree oven 40 minutes or until center is just about firm.
