This is a recipe that was my grandmothers (Evelyn) she was a wonderful cook and this pie is awesome.

Ingredients

brown sugar
2 Tbsp
butter, room temperature
2 Tbsp
flour
2 large
egg yolks, reserve whites
1/4 tsp
salt
1 tsp
vanilla extract
1 c
milk
1/2 c
water

FOR MERINGUE

2
egg whites
4 Tbsp
sugar

How to Make Evelyn's Butterscotch Pie

Step-by-Step

  • 1Bake a 9 inch pie crust at 350 degrees until golden brown. Cool on wire rack.
  • 2In a saucepan; combine brown sugar, butter, flour, egg yolks, salt, vanilla extract, milk and water. On medium heat bring to a boil, stirring constantly so it doesn't scorch; reduce heat and stir until filling thickens. Cool slightly; then pour into pie crust.
  • 3In a mixing bowl; add egg whites and sugar. Using a hand mixer; mix on medium high speed until soft peek's form. Pour mixture on pie and bake at 350 degrees until meringue is browned. Cool on wire rack and refrigerate left overs.
