This is a recipe that was my grandmothers (Evelyn) she was a wonderful cook and this pie is awesome.

Ingredients

  • 1 c
    brown sugar
  • 2 Tbsp
    butter, room temperature
  • 2 Tbsp
    flour
  • 2 large
    egg yolks, reserve whites
  • 1/4 tsp
    salt
  • 1 tsp
    vanilla extract
  • 1 c
    milk
  • 1/2 c
    water
  • FOR MERINGUE

  • 2
    egg whites
  • 4 Tbsp
    sugar

How to Make Evelyn's Butterscotch Pie

Step-by-Step

  1. Bake a 9 inch pie crust at 350 degrees until golden brown. Cool on wire rack.
  2. In a saucepan; combine brown sugar, butter, flour, egg yolks, salt, vanilla extract, milk and water. On medium heat bring to a boil, stirring constantly so it doesn't scorch; reduce heat and stir until filling thickens. Cool slightly; then pour into pie crust.
  3. In a mixing bowl; add egg whites and sugar. Using a hand mixer; mix on medium high speed until soft peek's form. Pour mixture on pie and bake at 350 degrees until meringue is browned. Cool on wire rack and refrigerate left overs.
