Ingredients
- 1 cup brown sugar
- 2 tablespoons butter, room temperature
- 2 tablespoons flour
- 2 large egg yolks, reserve whites
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup milk
- 1/2 cup water
- FOR MERINGUE
- 2 - egg whites
- 4 tablespoons sugar
How To Make evelyn's butterscotch pie

Step 1Bake a 9 inch pie crust at 350 degrees until golden brown. Cool on wire rack.

Step 2In a saucepan; combine brown sugar, butter, flour, egg yolks, salt, vanilla extract, milk and water. On medium heat bring to a boil, stirring constantly so it doesn't scorch; reduce heat and stir until filling thickens. Cool slightly; then pour into pie crust.

Step 3In a mixing bowl; add egg whites and sugar. Using a hand mixer; mix on medium high speed until soft peek's form. Pour mixture on pie and bake at 350 degrees until meringue is browned. Cool on wire rack and refrigerate left overs.
