This is a recipe that was my grandmothers (Evelyn) she was a wonderful cook and this pie is awesome.

Ingredients

  • 1 cup brown sugar
  • 2 tablespoons butter, room temperature
  • 2 tablespoons flour
  • 2 large egg yolks, reserve whites
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1/2 cup water
  • FOR MERINGUE
  • 2 - egg whites
  • 4 tablespoons sugar

How To Make evelyn's butterscotch pie

  • Step 1
    Bake a 9 inch pie crust at 350 degrees until golden brown. Cool on wire rack.
  • Step 2
    In a saucepan; combine brown sugar, butter, flour, egg yolks, salt, vanilla extract, milk and water. On medium heat bring to a boil, stirring constantly so it doesn't scorch; reduce heat and stir until filling thickens. Cool slightly; then pour into pie crust.
  • Step 3
    In a mixing bowl; add egg whites and sugar. Using a hand mixer; mix on medium high speed until soft peek's form. Pour mixture on pie and bake at 350 degrees until meringue is browned. Cool on wire rack and refrigerate left overs.
