eloise's pecan pie
This recipe was my mother in law's recipe. It is not your typical pecan pie in that you do not use syrup in it. It is so good though! She passed away suddenly in 2006 and I have been asked, by my husband & his siblings, to bake this pie every Thanksgiving & Christmas. It is an honor to do so. I think about my sweet mother in law each time! Enjoy!

Ingredients
- 1/2 cup softened butter
- 1 cup sugar
- 1 teaspoon vanilla flavoring
- 1 cup chopped pecans
- 2 - eggs, whites separated from yolks
- 1 - unbaked pie shell
How To Make eloise's pecan pie

Step 1Preheat oven to 350 degrees

Step 2Cream butter & sugar together.

Step 3Add vanilla & egg yolks.

Step 4Stir in pecans.

Step 5In separate bowl, beat egg whites until stiff.

Step 6Fold whites into other mixture.

Step 7Pour into unbaked pie shell & bake about 45 minutes.
