ella's pecan pie

My mother got this recipe from her friend, Ella, many years ago when I was a child. We have always used this recipe for a pecan pie that is just right and not overly sweet. You'll want seconds!

Ingredients

  • 2 tablespoons butter, softened
  • 1/2 cup light brown sugar
  • 2 - eggs, well beaten
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup karo light corn syrup
  • 1 1/2 cups pecan halves
  • 1 - 9-inch pie shell (uncooked - i use pillsbury refrigerated pie crusts)

How To Make ella's pecan pie

  • Step 1
    Preheat oven to 400 degrees F. In a medium bowl, cream butter and sugar together until light.
  • Step 2
    Add eggs, then flour, salt, vanilla, corn syrup, and pecans. Mix well by hand.
  • Step 3
    Pour into pie shell and bake for 10 minutes at 400 degrees F. Then reduce heat to 350 degrees F and bake for 30 minutes. Cool completely before serving.
