I've never heard of such a thing, but when I saw it I knew I'd be making it for the holidays and thought I'd share it with all of you as well. Sounds easy AND delicious, what more could you ask for?! LOL I found this in the church cookbook my mom put together years ago when I was little, but there is no name listed with the recipe. So, I'll just say a blanket thank you to all those lil ole grannies in the church who were such amazing cooks and chose to share many of their best recipes in that cookbook. Ingredients

  • 1 package vanilla pudding mix (not instant)
  • 2 teaspoons unflavored gelatin
  • 2 cups egg nog
  • 1/2 teaspoon rum extract
  • 1 cup (small carton) whipping cream
  • 1 - baked 9 inch pie crust

How To Make eggnog pie

  • Step 1
    Combine pudding, gelatin and eggnog in a saucepan. Cook on low heat OR in a double boiler, stirring until thickened and bubbly. Remove from heat and stir in rum extract. Cover surface of pudding with saran wrap to prevent skin from forming and chill. Whip cream until stiff. Beat eggnog mixture until smooth. Fold in whipped cream. Pour into baked pie crust and chill for several hours until set. Garnish with shaved chocolate, glazed fruit, whipped cream or nutmeg.
