egg nog pie

I don't like to use raw egg whites, so I blend the warm mixture into the whipped egg whites a little at a time, and whip and stir. This is a tasty pie... just like egg nog.

Ingredients

  • 1 - baked pie shell (9-inch)
  • 2/3 cup sugar
  • 1 - envelope knox unflavored gelatin
  • 1/2 teaspoon salt
  • 4 - eggs (separated)
  • 1 1/3 cups milk
  • 1 tablespoon rum
  • 1/4 teaspoon cream of tartar
  • 1/2 cup sugar
  • 1/4 cup whipped cream
  • - cinnamon and nutmeg

How To Make egg nog pie

  • Step 1
    Bake pie shell.
  • Step 2
    Stir together 2/3 cup sugar, salt and gelatin in a saucepan, set aside. Gently beat and blend egg yolks with milk.
  • Step 3
    Blend egg yolks and milk. Stir into sugar mixture. Cook over medium heat, stirring constantly, just until mixture comes to a boil.
  • Step 4
    Place pan in bowl of ice and water, stirring occasionally until mixture mounds slightly when dropped from spoon. Beat egg whites and cream of tartar until foamy. Beat in 1/2 cup sugar, 1 tablespoon at a time, continue beating until stiff and glossy. Do not under beat. Fold gelatin mixture into meringue mixture. Fold meringue mixture into whipped cream. Pile into baked shell. Sprinkle generously with nutmeg. Chill 3 hours.
