easy to roll no shortening pie crust

I've been looking for a pie recipe that doesn't use shortening but is easy to roll out. I don't like it when the dough won't hold together. This dough is easy to work with and that makes all the difference for my mental health. People complain about untangling Christmas lights, well I don't like pie dough that falls apart. Rather than doubling the batch for a double crust pie, I recommend making two separate batches.

Ingredients

  • 1 1/4 cups all purpose flour, i like king arthur
  • 1/4 teaspoon salt
  • 1/3 cup frozen butter, shredded
  • 4-6 tablespoons cold water

How To Make easy to roll no shortening pie crust

  • Step 1
    Combine flour and salt. I like to use a whisk.
  • Step 2
    Using a pastry blender or fork, cut frozen shredded butter into flour mixture until mixture resembles coarse crumbs. Add water, 2 T at a time. (I put a cup of cold water with ice cubes and then add as I need it). Form into a ball.
  • Step 3
    Generously flour countertop and roll out dough to fit a 9" pie pan. Be sure to flour the dough as you go so the roller doesn't stick. Roll the crust around the pin to lift and transfer into your pie plate. Trim edges as needed. Add desired pie filling and follow that recipe for appropriate bake times.
