easy pineapple cheesecake

I was given this simple dessert recipe many years ago by a co-worker. It has remained a success throughout the years since she shared it with me. There were times at work when we had parties that I had to make individual pies for colleagues to take home--just to be able to have some to share during the party!

Ingredients

  • 1 package cream cheese
  • 12 ounces container of whipped topping
  • 1/2 cup sugar
  • 1 pinch vanilla extract
  • 6 ounces container crushed pineapple
  • 1 - graham cracker pie crust
  • 4 ounces pineapple tidbits

How To Make easy pineapple cheesecake

  • Step 1
    Allow cream cheese to warm to room temperature for ease of mixing. In mixing bowl, mix cream cheese, whipped topping,vanilla, sugar and crushed pineapple (drained)until well blended.
  • Step 2
    Spoon mixture into pie crust. Top with pineapple tidbits. Refrigerate until ready to serve. Slice and enjoy.
  • Step 3
    Other fruits can be used but some do not mix well in the filling. The basic mixture can be spooned into a pie crust then layered with favorite fruit. I have tried strawberries, peaches, and cherries. Use fresh fruit or pie filling as topping for this easy and tasty treat.
