How to Make Easy One Bowl Coconut Pie
- In a blender, combine milk, sugar, eggs, vanilla, flour, butter, and salt. (Do not melt butter. Cold is fine). Cover and blend.
- Add coconut and blend for 10 seconds or until all ingredients are blended. Spray a 10 inch pie plate with nonstick cooking spray. Pour into the pie pan. Top with a handful of coconut and grated nutmeg.
- Bake at 350 for 50-55 min. Insert a knife in the center, and if it comes out clean the pie is done! This pie can be served warm or cold!
