This cool and creamy treat can be made into 1 large, deep-dish pie shell or 2 (9-inch) graham cracker crusts - one to keep and one to share! It can also be served as a fruit salad.

Ingredients

  • 8 ounces cream cheese, room temperature
  • 1/2 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • 12 ounces non-dairy whipped topping, thawed
  • 1/2 cup finely chopped pecans
  • 1/2 cup shredded coconut
  • 8 ounces pineapple tidbits, drained
  • 11 ounces mandarin oranges, drained
  • 1/2 cup red or green grapes, halved
  • 1/2 cup maraschino cherries, drained
  • 1 - deep-dish pie shell, baked
  • - additional fruit , chopped pecans or toasted coconut for garnish if desired

  • Step 1
    Using an electric mixer, blend the cream cheese, sugar, lemon juice and salt until smooth.
  • Step 2
    Gently fold in whipped topping, pecans, coconut and fruit until combined.
  • Step 3
    Spoon mixture into baked pie shell and garnish as desired. Chill for at least 2 hours or until serving time.
