This recipe makes a nice, thick pie filling. I personally used 2 Golden Delicious apples, and 2 Honeycrisp apples. They paired together nicely. This is a great dessert to serve for the holidays. I baked this pie for some friends last night, who said it was the best apple pie they ever had. Which is always nice to hear :)
To make your filling: Place sliced apples in a large saucepan. Sprinkle lemon juice over apples. Combine cornstarch, sugar, and cinnamon together and pour over apples. Next, pour HOT apple juice into your pan. Stir over medium heat until thickened. Add mixture into your pie crust.
To make the pie topping: Mix together softened butter, flour, sugar, and brown sugar. Crumble the mixture on top of the pie.
Place your pie on the bottom rack of the oven. After doing so, immediately lower oven temp to 375. After 10 minutes of baking, place pie on top rack of oven for 20 more minutes.
Be sure to allow at least 2-3 hours for pie to cool and set before serving.
