ginger skaggs

This was the first thing I learned to help with in the kitchen. My great aunt Naomi would make pie pastry, roll it out and let me cut around a saucer, inverted, to make the crust using a table knife. Using home dried fruit, usually apples, reconstituted on the top of the stove with a small amount of water and spices these were made. Today when I make them I use canned biscuits. My version is the one I am posting.

How to Make Dried Fried Fruit Pies

  1. Reconstitute fruit in water on stove top on low heat. Stir often to prevent sticking.
  2. Add cinnamon to taste.
  3. Open biscuits and separate.
  4. Roll biscuits out on lightly floured surface keeping circular shape.
  5. Place approximately one tablespoon of fruit in center of biscuit.
  6. Fold biscuit over filling and crimp edges. (I use a fork).
  7. Place in heated skillet with small amount of oil and fry until golden.
  8. Turn and fry on other side.
  9. Place on platter until all are done.(You may want to place on a paper towel to help with grease absorption).
