I made a graham cracker crust for a pie, then realized I really didn't have enough regular milk for the recipe I was going to use. after going through my can goods I found coconut milk and thought I would give it a try, the results, were fantastic, so creamy and smooth. Great tasting!

Ingredients

2 box
vanilla pudding-3.4 oz size
4 c
coconut milk
1 tsp
coconut extract
1 Tbsp
soft butter
1 c
finely shredded coconut

How to Make Dreamy Creamy coconut pie

Step-by-Step

  • 1empty coconut milk in a medium sized bowl and whisk until smooth
  • 2in large pot add the coconut milk and the vanilla pudding and cook as directed on the back of the box
  • 3Remove from heat and stir in butter and extract,
    stir in coconut.
  • 4pour into prepared pie crust.
    Refrigerate until set and chilled
    Top with prepared desert topping such as cool whip
    if desired sprinkle with toasted coconut,
