dreamy creamy coconut pie

I made a graham cracker crust for a pie, then realized I really didn't have enough regular milk for the recipe I was going to use. after going through my can goods I found coconut milk and thought I would give it a try, the results, were fantastic, so creamy and smooth. Great tasting!

Ingredients

  • 2 boxes vanilla pudding-3.4 oz size
  • 4 cups coconut milk
  • 1 teaspoon coconut extract
  • 1 tablespoon soft butter
  • 1 cup finely shredded coconut

How To Make dreamy creamy coconut pie

  • Step 1
    empty coconut milk in a medium sized bowl and whisk until smooth
  • Step 2
    in large pot add the coconut milk and the vanilla pudding and cook as directed on the back of the box
  • Step 3
    Remove from heat and stir in butter and extract, stir in coconut.
  • Step 4
    pour into prepared pie crust. Refrigerate until set and chilled Top with prepared desert topping such as cool whip if desired sprinkle with toasted coconut,
