dreamy creamy coconut pie
I made a graham cracker crust for a pie, then realized I really didn't have enough regular milk for the recipe I was going to use. after going through my can goods I found coconut milk and thought I would give it a try, the results, were fantastic, so creamy and smooth. Great tasting!

Ingredients
- 2 boxes vanilla pudding-3.4 oz size
- 4 cups coconut milk
- 1 teaspoon coconut extract
- 1 tablespoon soft butter
- 1 cup finely shredded coconut

Step 1empty coconut milk in a medium sized bowl and whisk until smooth

Step 2in large pot add the coconut milk and the vanilla pudding and cook as directed on the back of the box

Step 3Remove from heat and stir in butter and extract, stir in coconut.

Step 4pour into prepared pie crust. Refrigerate until set and chilled Top with prepared desert topping such as cool whip if desired sprinkle with toasted coconut,
