Di's Grandmother's Mincemeat
2-3 lbground cooked meat (flank beef or venison)
8 lbdried fruit a mixture of (raisins, currents, golden raisins)
9 lbunpeeled apples
·juice and rind of 3 oranges and 2 lemons
2 Tbspeach of: cinnamon, cloves and allspice
8 Tbspcoffee steeped in a little water (strain)
How to Make Di's Grandmother's Mincemeat
- Add fruit and everything to the steeped coffee, bring everything to a boil in a big pot. Keep hot, stirring often for 4-5 hours.
- Note: in the ingredients under the 9 lbs of unpeeled apples, etc., a note of 2 lbs of mixed peels. Wow, this must make a lot of mincemeat. I'm going on a search for a smaller and more informative recipe, but thought you might enjoy reading this one.
