di's grandmother's mincemeat

I found this handwritten recipe (my mom's writing) tucked in an old All-Maine Cooking cookbook. I have never made it, but posting it for Kristi Luce who is looking for a home made Mincemeat recipe. I did notice that it uses Suet (I think I'd look for an alternative, but they do sell it in the grocery store). If you use this recipe, Kristi, please let us know how it came out.

Ingredients
- 2-3 pounds ground cooked meat (flank beef or venison)
- 3/4 pound suet
- 8 pounds dried fruit a mixture of (raisins, currents, golden raisins)
- 9 pounds unpeeled apples
- - juice and rind of 3 oranges and 2 lemons
- 5 pounds sugar
- 2 tablespoons each of: cinnamon, cloves and allspice
- 1 tablespoon nutmeg
- 8 tablespoons coffee steeped in a little water (strain)
How To Make di's grandmother's mincemeat

Step 1Add fruit and everything to the steeped coffee, bring everything to a boil in a big pot. Keep hot, stirring often for 4-5 hours.

Step 2Note: in the ingredients under the 9 lbs of unpeeled apples, etc., a note of 2 lbs of mixed peels. Wow, this must make a lot of mincemeat. I'm going on a search for a smaller and more informative recipe, but thought you might enjoy reading this one.
