This was my grandmother's recipe. It is an old recipe but never goes out of style. I remember walking into her house when she was baking them and just feeling warm all over.. She always sat me on the counter to "help".. She is gone now but she will always live through her recipes. I did tweek it a little bit using a different type of apple and refrigerated pie crusts.
1peel and cut apples in thin slices. combine apples, brown sugar, cinnamon and nutmeg in bowl and mix well together
2place bottom pie crust in pie pan I bake to a light brown prior to adding apples. Pour apple mixture into pie crust. dot with butter all over the top of apples.
3Place pie crust on top. use egg white and 1/4 tablespoon water mixture to wash the top of the crust . sprinkle w/ white sugar and cinnamon before baking. Bake at 425 for 40 min. edges of crust will burn so you may want to cover edges with aluminum foil or edge fittings.
