Ingredients

  • 4 - eggs
  • 1 3/4 cups sugar or splenda sugar
  • 2 cups milk or non-fat milk
  • 1/4 cup butter or light butter, melted
  • 1/2 cup all purpose flour
  • 1 cup flaked coconut
  • 1 teaspoon vanilla extract
  • - optional: whipped cream, toasted flaked coconut

How To Make crustless coconut pie

  • Step 1
    In large bowl, beat eggs until frothy. Add remaining ingredients except garnish in order given mix well.
  • Step 2
    Spread in 2 ungreased 9" pie plates; bake at 350F for 25 to 30 minutes until golden. Garnish with whipped cream and toasted coconut if desired. Make 2 pies, 6-8 serving each.
