  • 1 3/4 c
    sugar or splenda sugar
  • 2 c
    milk or non-fat milk
  • 1/4 c
    butter or light butter, melted
  • 1/2 c
    all purpose flour
  • 1 c
    flaked coconut
  • 1 tsp
    vanilla extract
  • ·
    optional: whipped cream, toasted flaked coconut

How to Make Crustless Coconut Pie


  1. In large bowl, beat eggs until frothy. Add remaining ingredients except garnish in order given mix well.
  2. Spread in 2 ungreased 9" pie plates; bake at 350F for 25 to 30 minutes until golden.
    Garnish with whipped cream and toasted coconut if desired. Make 2 pies, 6-8 serving each.
