My ex-mother-in-law used to make this. I love it. I have seen a similar pie in a cafeteria we used to go to, it has been a long time, though. I hope you like it, too! There is no crust to worry about with this recipe, either.

Ingredients For crunchy "pie"

  • 3 lg
    egg whites
  • 1 c
    sugar
  • 1 tsp
    vanilla extract
  • 20
    ritz crackers, crumbled to pieces, not crumbs though
  • 1 c
    pecans, chopped
  • sweetened whipped cream for topping

How To Make crunchy "pie"

  • 1
    Preheat oven to 300. Butter a pie pan.

    Beat egg whites, sugar, and vanilla until stiff. Fold in crackers and pecans.

    Pour mixture into pie pan and bake for 30 minutes. Cool completely. Cut and top each individual piece with whipped cream. Don't store with whipped cream on it, it may get mushy on you.
