Ingredients

  • 1/2 c
    butter,softened
  • 1 Tbsp

  • 2/3 c
    sugar
  • 1 1/2 c
    flour
  • 1 tsp
    baking powder
  • 1
    egg
  • 13 1/2 oz
    lingonberries, thawed and drained
  • 7 Tbsp
    sugar
  • 1 Tbsp
    cornstarch
  • 1/2 c
    oatmeal, uncooked
  • 2 Tbsp
    oatmeal, uncooked
  • 7 Tbsp
    sugar
  • 1 tsp
    vanilla
  • 4 Tbsp
    butter, cut into cubes

How to Make Crumb Topped Lingonberry Pie

Step-by-Step

  1. Preheat oven to 350 F.
  2. To make Crust: First mix 1/2 C + 1 T softened butter and sugar. Add flour, baking powder, and egg. Quickly mix to form a ball. .
  3. Press the dough on the bottom and sides of a pie plate
  4. .For Filling: combine lingonberries, sugar and cornstarch
    and mix well. Spread the filling in the pie plate..
  5. For Topping: Combine 1 1/2 C+2 T oatmeal, sugar, and vanilla. Sprinkle on top of the berries. Top with the butter cubes.
  6. Bake for 30-35 minutes. Allow to cool completely
