creamed rhubarb pie

This is my moms recipe. If you like rhubarb this is soooo good!! It is my favorite rhubarb pie recipe.

Ingredients

  • 4 cups fresh or frozen rhubarb, cut into small pieces
  • 1 cup sugar
  • 2 - eggs yolks
  • 1 cup can evaporated milk
  • 1/8 teaspoon salt
  • 2 tablespoons flour (use 3 tbsp. if rhubarb is frozen)
  • 1 teaspoon cinnamon

How To Make creamed rhubarb pie

  • Step 1
    Put cut up rhubarb into unbaked pie crust. ( I use deep dish pie crust)
  • Step 2
    In large bowl beat 2 egg yolks. ( I use hand beater, pictured.)
  • Step 3
    Add flour, sugar, salt, milk, 1/2 tsp. cinnamon to beaten eggs, mix. (use remaining 1/2 tsp. cinnamon for top of pie)
  • Step 4
    Pour mixture over rhubarb. Sprinkle remaining 1/2 tsp. cinnamon on top of pie.
  • Step 5
    Bake 375 degrees for one hour or until custard is set.
