The reason mom mentioned coconut in this recipe is her mom, Grandma W, used to make coconut cream pie that everyone in the family wanted! She never shared the recipe though, so this was a close option with the coconut added that mom made. This is more like a custard pie to me...

- 3 cups milk, reserve 1/2 cup
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 cup flour
- 3 - egg yolks, beaten slightly
- 2 tablespoons butter
- 1 teaspoon vanilla
- 1 cup coconut, optional

Step 1Boil 2 1/2 cups milk and gradually add sugar. When almost to a boil again, combine cornstarch, flour and remaining milk and add. Bring to a boil again, stirring constantly. Remove from stove to add the egg yolks. Return to cook 5 minutes. Add remaining ingredients and cool.
