Ingredients

CRUST

1 1/2 c
flour
1/4 c
sugar
1/2 tsp
baking powder

egg
1
stick butter

FILLING

2 c
low bush cranberries (lingonberries)
1/2 c
sugar

TOPPING

1/2
stick butter
1 c
coconut flakes
1
egg
1/2 c
sugar
1 tsp
vanilla
dollop
honey

How to Make Cranberry Pie

Step-by-Step

  • 1Preheat oven to 375 ยบ
    Mix dry crust ingredients. Add softened butter, the egg and vanilla. Mix with a fork or your fingers. Press crust into a greased pie plate.
  • 2Spread cranberry-sugar mixture over crust and bake the pie for apprx 25 mins at 375.
  • 3Measure ingredients for the frosting and mix hem in a saucepan over low to medium heat. Don't cook the frosting, keep stirring it until mixture looks smooth. Set it aside until the pie comes out.
  • 4Spread the frosting over the pie carefully. Bake the pie an additional 10 minutes or until coconut is brown a bit. (If I'm in a hurry, put it under broiler on the lower rack for a few minutes watching very carefully.
