Ingredients
- CRUST
- 1 1/2 cups flour
- 1/4 cup sugar
- 1/2 teaspoon baking powder
- 1 - egg
- 1 - stick butter
- FILLING
- 2 cups low bush cranberries (lingonberries)
- 1/2 cup sugar
- TOPPING
- 1/2 - stick butter
- 1 cup coconut flakes
- 1 - egg
- 1/2 cup sugar
- 1 teaspoon vanilla
- dollop - honey
How To Make cranberry pie

Step 1Preheat oven to 375 º Mix dry crust ingredients. Add softened butter, the egg and vanilla. Mix with a fork or your fingers. Press crust into a greased pie plate.

Step 2Spread cranberry-sugar mixture over crust and bake the pie for apprx 25 mins at 375.

Step 3Measure ingredients for the frosting and mix hem in a saucepan over low to medium heat. Don't cook the frosting, keep stirring it until mixture looks smooth. Set it aside until the pie comes out.

Step 4Spread the frosting over the pie carefully. Bake the pie an additional 10 minutes or until coconut is brown a bit. (If I'm in a hurry, put it under broiler on the lower rack for a few minutes watching very carefully.
