cranberry-mallow pie

Mom's handwritten recipe, found among the hundreds of recipes I've cut out of magazines and newspapers. Sounds easy and tasty, I have not made it myself, but I intend to try it. Her suggestion was to add green coloring to the topping, for decoraton for the Christmas holiday. I am not sure I want to do that, and I usually do things "my way"!

Ingredients
- 1 package 3 oz. size raspberry jello
- 1 cup boiling water
- 1 3/4 cups whole cranberry sauce; (1 can)
- 1 cup crushed pineapple, drained
- 1 - graham cracker pie crust
- 2 cups marshmallows, mini
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
- 1 cup heavy cream, whipped
- 1 dash green food coloring (optional)
How To Make cranberry-mallow pie

Step 1Dissolve Jello in the boiling water, chill unitl slightly thickened. Fold in whole cranberry sauce and drained/crushed pineapple.

Step 2Pour into graham cracker crust, chill until firm.

Step 3Using a double-boiler,melt mini marshmallows and 1/4 cup milk, stirring until smooth;add vanilla, and if desired stir in a dash of green food coloring. Chill until thickened.

Step 4Whip the cream and stir into the marshmallow mixture. Spread this topping over the pie, and chill again until firm.
