Ingredients

  • PANNA COTTA

  • 1 1/4 c
    heavy cream
  • 1/2 c
    sugar
  • 1/2 c
    brown sugar
  • 1 pkg
    dark chocolate chunks
  • 1/2 pkg
    raw cranberries
  • 1/2 c
    spiced rum
  • 1 pkg
    gelatin, unflavored
  • 1 dash(es)
    water, as needed
  • CRUST

  • 1 c
    toasted coconut flakes
  • 1 c
    crushed graham crackers
  • 1 stick
    butter, room temperature
  • 1 dash(es)
    cold water
  • 1 pinch
    cinnamon, mixed with sugar
  • 1 dash(es)
    vanilla extract

How to Make Valentine's Cranberry&DarkChocolate PannaCotta Pie

Step-by-Step

  1. Take all the crust ingredients and combine in a bowl. I like to mix with my hands. Then press into the bottom and sides of a greased, ceramic pie dish.
  2. Bake for 10 minutes at 350 degrees. Then remove and set aside.
  3. In one small pot, combine water, cranberries, sugar, brown sugar. Cook for 5 minutes on med.
  4. Then add chocolate and stir until melted. Remove from heat.
  5. When removed from heat, add rum. Set mixture aside. If you like a less strong rum taste, add with the chocolate and let it cook out some.
  6. In another pot, add heavy cream and gelatin. Keep on a low heat and just until the gelatin mixes into the cream.
  7. Then add the cream mixture to the chocolate cranberry mixture, and pour into the cooled pie crust.
  8. Refrigerate overnight. Serve with whipped cream. Best with either coffee or Earl Grey tea.
